ITALIAN CHICKEN & RICE
Servings: 4 servings
1 1/2 cup water
1 cup rice --, uncooked
1 14 oz can
1/2 lb cheddar cheese --, shredded
1/2 cup onion --, chopped
1/4 tsp garlic powder
2 tsp italian seasoning --
divided
4 skinless boneless chicken
breast
2/3 cup parmesan cheese --, grated
tomatoes --/undrained, broken
Directions: preheat oven at 375. prepare a 9x13 baking pan with cooking spray. mix water, rice, tomatoes, cheese, onion, garlic powder, and 1 teaspoon italian seasoning. top the mixture with the chicken and sprinkle with parmesan cheese and remaining italian seasoning. bake for 50 to 60 minutes or until the chicken is fork tender and no pink remains. remove from the oven and let stand for 5 to 10 minutes before serving. recipe by : art ginsburg
